Spring is right around the corner and with that, it is time for a quick and easy salad that everyone is sure to love.
Dr. Uttaburanont, of Rancho Family Medical Group, absolutely loves cooking. When I first asked her what her favorite recipe was, she couldn’t name one because she creates new ones so frequently. After some thought, this watermelon salad stood out because of how refreshing it is on a nice spring day. With only a few healthy ingredients, this salad is the perfect picnic side. Enjoy
- 1 watermelon, cut into bite-sized cubes
- 1 lemon
- 1 handful or mind, chopped
- 1 cup thinly sliced red onion
- feta cheese for topping
- 1 cucumber, sliced thin
Add cubed watermelon, sliced cucumber, red onion, and chopped mint in a large bowl. Then cut your lemon in half and squeeze 1/2 of the juice over the bowl of ingredients. Lightly toss together. Sprinkle a handful of feta cheese on top of the salad and serve.
